A Portland Thanksgiving
I had a lot of fun hosting Thanksgiving this year. For many years I've helped out my mom with cooking and everything else but it is a whole other thing to plan everything myself. I successfully pulled off a sit-down dinner for fourteen plus Sarah who sat down only some of the time. Besides family that had travelled from up and down the East coast I had a few neighbors and friends over.A pasture-raised turkey was secured a while ago from Abudant Life Farm near Dallas, Oregon. It cooked perfectly in an hour and a half at 450 degrees, all 18.85 lbs of it. The menu was rounded out with:
- a leek and goat cheese gallette appetizer made by Beth
- champagne
- rutabaga savory-sweet pudding with wild blueberries
- smashed sweet potatoes with apples
- spinach gratin
- roasted brussels sprouts
- onion gravy
- veggie and meat stuffings from Josh
- cranberry sauce and wild rice pilaf from Jason and Elvira
- Mim's ice box rolls!
- pecan pie from Kelly
- chocolate cheesecake from Beth
- cappuccino chocolate squares from Beth
- and two pumpkin pies, crust by Suz
